Conference: Sustainable gastronomy
“Sustainable gastronomy in family and small hotel business – necessity or trend?” is the name of the conference held on June 9 in the multimedia hall of the Interpretation Centre.
The conference was held as part of the project “Green and digital transformation of small and family hotels”, organized by the National Association of Family and Small Hotels.
After the official opening, the Minister of Tourism and Sports, Nikolina Brnjac, awarded “Eco Green Hotel” certificates to the members of the association who met the conditions for green transformation.
Eco green certificates have been awarded since last year, and depending on the degree of satisfaction of strict criteria, they can be silver, gold and platinum. A total of 12 certificates were awarded – silver ones were awarded to hotels Degenija, Hani, Vila Conte, Štacija, Puteus Palace, Villa Telenta, Glavović, Zlatna Vala, while gold ones were given to Vila Rova, Borovnik, Stancija 1904 and San Rocco.
The conference was also attended by Šibenik’s mayor Željko Burić, director of the Croatian Tourist Board Kristijan Staničić and president of the National Association of Family and Small Hotels Šime Klarić.
The awarding of the certificate was followed by lectures: “Sustainable gastronomy – added value for everyone in the chain” by lecturer M.Sc. Neda Košuta, and the lecture “Sustainable gastronomy in family and small hotels” by the owner of Pelegrini restaurant in Šibenik – Rudi Štefan, who was also the head of the expert group of the project.
Finally, a panel discussion was held on the same topic, and in addition to Rudi Štefan, participants included Tullio Fernetich, owner of the family hotel San Rocco in Brtonigla, Marin Pleše, chef at the family hotel Vila Rova in Malinska, and Robert Pende, director of the Ministry of Tourism and sports.
Jelena Bikić, owner of Silvan natural cosmetics, presented her products inside the hall.
